Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups cooked shredded chicken (rotisserie chicken works well)
- 2 cups egg noodles
- Fresh parsley for garnish
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Cook until the vegetables are softened, about 5 minutes.
2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
3. Pour in the chicken broth and add the dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the soup to a simmer.
4. Add the shredded chicken to the pot and let it simmer for about 10 minutes to allow the flavors to meld.
5. In a separate pot, cook the egg noodles according to the package instructions. Drain and add the cooked noodles to the soup.
6. Taste the soup and adjust the seasoning if needed. Remove the bay leaf.
7. Serve the chicken noodle soup hot, garnished with fresh parsley.
